I decided to wait until next weekend to send out the invites. As I had 30 left to put into envelopes today, I realized that I forgot to number the RSVP cards (in case the person doesn't write their name, I would know who sent it.) I think I got so excited to start sealing the envelopes, it just slipped my mind. I was mad at myself- but I marked the 30 we had left, and I will keep my fingers crossed that everyone else writes their name on the card or puts a return address on the envelope!
In other news, 3 weeks of my internship down, 9 weeks left to go. 25%! Next week I have to start doing evalutions, which scare the heck out of me...wish me luck!

Stupid Human Contact...
At least 3 times this week someone blew their nose or sneezed, looked at me and said "Oh I'm not sick, it's just allergies." Yeah, well guess what?! Someone was telling a big lie because now I am sick! Ugh...I Purell my hands probably 15 times a day but I still got sick. Awesome.
Yesterday I took an invitation to the post office to see how much it will cost to mail. By weight, it costs $0.61. For 61 cents, they have a pretty wedding stamp that has a white wedding cake. Woohoo!! But then the post office woman crushed my pretty stamp dream when she said "But they are too hard to go through the machine, so in total it will be $0.81." She proceeds to tell me that the 10 cent stamps are ugly (LOL) and she doesn't know what to tell me. So in my brillance, I said I would just do two 44 cent stamps. They have wedding 44 cent stamps, so at least I won't have ugly birds or planes or something on our wedding invitations!
She then says "Why the heck are these so hard, anyway?!", so I take it out of the envelope to show her. She flips it around, looking at it and says "Wow, these are so elaborate!" I tell her I made it all by hand and her eyebrows went up. "You really did?!" "Yes ma'am, I did." "Well they are beautiful.....but now you have to pay for the beauty." haha thanks a lot post office woman. At least I got a compliment. So I bought $96.80 worth of stamps yesterday...I don't think I have ever or will ever again spend that much in a post office!!

Crisis Mode Down
So I guess the crisis isn't really a crisis after all. I spoke with my internship instructor and he kind of put my mind at ease about the whole career situation. I don't know where my road will lead me, but I really want that diploma that I've worked so hard for. As long as Fiance is by my side, my road will be smooth.
These hours are starting to get to me, though. I'm tired by 4:00 when I have 3 hours left of work, and I don't sleep through the night. Man, I sound like a little kid lol
In other news, it actually snowed here today and you would think it was a blizzard. Everything is closing tonight because we are supposed to get 3 more inches. Um, hello...we live in New England here!! But it's okay- the snow is pretty and today was my early day from the clinic so I am home on the couch.
Next up on the wedding front: Finishing assembly of the invitations because they have to get mailed in 2 weeks (omg, 2 weeks?! seriously?!) Lots of projects to wrap up in between being a therapist!!

My Disappearance
Hi all-
Sorry for my lack of posts. I know they weren't all that exciting to begin with, but now there are none! I started my internship on Monday so I haven't hada lot any time at all to cook or blog. I work 11 hours 3 days a week, and 5 hours the other 2 days, so it makes for some exhaustion. On the 11 hour days I get home well after dinner time, so it is up to fiance to cook. This week was good, he did make dinner and waited until I got home to eat, which was nice. I will still be trying to make new things on the other 2 nights, but posting them is going to be the challenge!
In wedding news-we have to finish assembling the invitations. The belly bands are made but need the person's name on the front. I am waiting on finding out the name of some people's SO, so once I do that I can print and finish those. I also have to bring one to the post office and have them weigh it to see how much postage I need on each. Please keep your fingers crossed that I can use the standard wedding postage. That way I can get the pretty stamps with the wedding cakes on them. If it is anymore than that, I swear I will order custom stamps because I don't want some ugly 2 cent stamp on the envelope!!! I will keep the blogging world posted :-P

Catching up on Recipes Part 1-Pulled Pork
This had to be the best pulled pork I have ever made. Normally I throw it all in the crockpot together (roast, spices, BBQ sauce) and cook it for 8 hours. But this time I decided that I didn't want to waste the last bottle of BBQ sauce we had in the pantry. So I made my own. Oh..my..gosh...I will never buy bbq sauce again.
BBQ Sauce
From The Neely's- Food Network
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar (I used white wine vinegar)
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
While that was simmering, the roast was in the crockpot on low. I put some salt, pepper, and chili powder on it and poured in about an inch of water. After about 4 hours I was able to pull it apart and I mixed in the bbq sauce. After cooking for 1 hour all together, I put it on rolls for pulled pork sandwiches.
Forgot to take a picture of the sandwich, but I got a picture of the pork!
